Here is an easy super simplified not authentic elote recipe for us folks without a grill. I grew up eating so many iterations of elote in El Paso, Texas, and this is a delicious snack or a wonderful side dish. If you have a grill and access to Mexican ingredients, I think this Serious Eats recipe is pretty great.

Ingredients
1/2 cup mayo or vegan mayo
1 teaspoon cayenne pepper
1 teaspoon chili powder
1 lime cut into wedges
2 tablespoons of chopped cilantro
¼ cup crumbled Cotija cheese or a vegan crumbly cheese or nutritional yeast
4 ears of fresh shucked corn
Salt to taste

Large pot for boiling corn
Tongs
Instructions
Bring water to boil in a large pot.
Mix 1/2 cup of mayo with 1 teaspoon of cayenne pepper and chili powder. Add salt to taste and put the chili-may into a cute serving bowl.
Set out ¼ cup of crumbled Cotija cheese into a cute serving bowl.
Cut the lime into wedges and chop cilantro. Place both in a cute serving dish.
Once the water boils, place the corn in the water and boil for 8 minutes.
Pull corn out of water with tongs and set on a large plate.
How to Serve
Let your guests assemble their own elote by slathering corn with chili-mayo and topping with cheese, salt, cilantro, and lime juice. She totally forgot to add the cilantro before taking the photos (oops).
